Brown the Ground Beef: In a large skillet over medium-high heat, brown the lean ground beef. Break it up with a spoon as it cooks. Drain off any excess grease.
Cook the Bacon: Add the diced bacon to the skillet with the ground beef. Cook until the bacon is crispy. If there’s a lot of excess grease, drain some off, leaving a couple of tablespoons for flavor.
Sauté the Onion: Add the diced onion to the skillet with the ground beef and bacon. Sauté until the onion is softened and translucent, about 5-7 minutes.
Combine Ingredients in Slow Cooker: Transfer the cooked ground beef, bacon, and onion mixture to your slow cooker.
Add Beans: Add the drained and rinsed kidney beans, cannellini beans, and pork ‘n beans to the slow cooker.
Add Sauce Ingredients: Pour in the ketchup, brown sugar, and liquid smoke. Stir well to combine all ingredients.
Slow Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. Stir occasionally, especially if cooking on high, to prevent sticking.
